Ingredients

  • 2 tablespoons vegetable oil
  • 2 chicken breasts, cut into cubes
  • 1 cup coconut milk
  • 1 tablespoon ginger, grated
  • 1 tablespoon red curry paste
  • 1 teaspoon fish sauce
  • 1 teaspoon brown sugar
  • 1 teaspoon lime juice
  • Salt and pepper, to taste

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the chicken and cook for about 5 minutes, stirring occasionally, until golden brown.
  2. Add the coconut milk, ginger, curry paste, fish sauce, brown sugar, and lime juice. Stir to combine and bring to a simmer. Reduce the heat to low and simmer for 10 minutes, stirring occasionally.
  3. Season with salt and pepper to taste and serve hot over steamed jasmine rice.
