Ingredients

  • 1 cup (240ml) cottage cheese
  • 2 large eggs
  • 2 tablespoons (30ml) olive oil
  • 3 tablespoons (45ml) melted butter
  • 1 tablespoon (15ml) dried dill
  • 1 teaspoon (5ml) garlic powder
  • 1 teaspoon (5ml) baking powder
  • 1/2 cup (120ml) almond flour
  • 1/4 teaspoon (2.5ml) salt

Directions

  1. Preheat oven to 400°F (200°C).
  2. In a medium bowl, mix together the cottage cheese, eggs, olive oil, melted butter, dill, garlic powder, baking powder, almond flour, and salt until well combined.
  3. Line a 12-cup muffin tin with non-stick paper liners.
