Ingredients
2 cups cooked white rice
1/4 cup frozen peas
1/4 cup frozen corn
1/4 cup diced onion
1/4 cup diced carrots
1/4 cup diced bell pepper
2 tablespoons oil
2 tablespoons soy sauce
Salt and pepper to taste
Directions
Heat 1 tablespoon of oil in a large skillet over medium-high heat.
Add the onion, carrots, bell pepper, frozen peas, and frozen corn to the skillet and cook for about 5 minutes, stirring occasionally.
Stir in the cooked rice and remaining 1 tablespoon of oil and continue to cook for another 3-4 minutes, stirring occasionally.
Add the soy sauce and season with salt and pepper to taste.
Continue to cook for another 2-3 minutes, stirring occasionally, until the ingredients are combined and everything is heated through.
Serve immediately.
