Poor-Man's Fried Rice

Ingredients

  • 2 cups cooked white rice
  • 1/4 cup frozen peas
  • 1/4 cup frozen corn
  • 1/4 cup diced onion
  • 1/4 cup diced carrots
  • 1/4 cup diced bell pepper
  • 2 tablespoons oil
  • 2 tablespoons soy sauce
  • Salt and pepper to taste

Directions

  1. Heat 1 tablespoon of oil in a large skillet over medium-high heat.
  2. Add the onion, carrots, bell pepper, frozen peas, and frozen corn to the skillet and cook for about 5 minutes, stirring occasionally.
  3. Stir in the cooked rice and remaining 1 tablespoon of oil and continue to cook for another 3-4 minutes, stirring occasionally.
  4. Add the soy sauce and season with salt and pepper to taste.
  5. Continue to cook for another 2-3 minutes, stirring occasionally, until the ingredients are combined and everything is heated through.
  6. Serve immediately.
