Ingredients

  • 2 lbs chicken thighs, boneless and skinless
  • 1 onion, chopped

  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1 sweet potato, peeled and cubed
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 2 tsp dried thyme
