Ingredients

  • 1 cup dry red beans
  • 3 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 2 tablespoons olive oil
  • 1 bay leaf
  • 2 cups cooked brown rice

Directions

  1. Soak the red beans in a bowl of water overnight.
  2. In a medium pot, heat the olive oil over medium heat.
  3. Add the onion, garlic, bell pepper, and spices. Sauté for 5 minutes.
  4. Add the soaked beans, vegetable broth, and bay leaf. Bring to a boil, then reduce heat to low.
  5. Simmer for 25-30 minutes or until the beans are tender.
  6. Remove from heat and discard the bay leaf.
  7. Serve over cooked brown rice.
