1/4 cup cooked vegetables (such as carrots, broccoli, or spinach)
Directions
In a medium bowl, whisk together the eggs, mirin, soy sauce, and sugar. Set aside.
Heat the vegetable oil in a large non-stick skillet over medium heat. When the oil is hot, pour in the egg mixture. Swirl the pan to evenly spread the eggs.
Cook the eggs for 3 minutes, until they start to set. When the edges of the eggs are set, fold the omelet in half.
Continue to cook the omelet for 2-3 minutes, until the eggs are cooked through. Flip the omelet over and cook for an additional 1-2 minutes.
Remove the omelet from the pan and let cool for a few minutes. Cut the omelet into thin strips.
Divide the cooked rice, green onion, and cooked vegetables among four bento boxes. Top each bento box with strips of omelet.
Serve the bento boxes immediately, or cover and refrigerate for up to 2 days.
