Ingredients
2 cloves of garlic, chopped
1 large onion, diced
6 large tomatoes, chopped
1 green bell pepper, diced
2 tablespoons of olive oil
2 tablespoons of white wine vinegar
1 teaspoon of sugar
Salt and pepper to taste
Directions
Heat the olive oil in a large pot over medium heat.
Add the garlic and onion, and cook until softened, about 5 minutes.
Add the tomatoes, bell pepper, vinegar, sugar, and salt and pepper. Stir to combine.
Reduce the heat to low and simmer for 10 minutes.
Remove from heat and let cool slightly.
Transfer the soup to a blender and blend until smooth.
Pour the soup into individual bowls and serve.
