Ingredients
- 2 cloves of garlic, chopped
- 1 large onion, diced
- 6 large tomatoes, chopped
- 1 green bell pepper, diced
- 2 tablespoons of olive oil
- 2 tablespoons of white wine vinegar
- 1 teaspoon of sugar
- Salt and pepper to taste
Directions
- Heat the olive oil in a large pot over medium heat.
- Add the garlic and onion, and cook until softened, about 5 minutes.
- Add the tomatoes, bell pepper, vinegar, sugar, and salt and pepper. Stir to combine.
- Reduce the heat to low and simmer for 10 minutes.
- Remove from heat and let cool slightly.
- Transfer the soup to a blender and blend until smooth.
- Pour the soup into individual bowls and serve.
