Ingredients

  • 1 sheet of puff pastry
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 red onion, diced
  • 2 cloves of garlic, minced
  • 3 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried basil
  • Salt and pepper, to taste
  • 1 cup of grated Parmesan cheese

Directions

  1. Preheat oven to 350°F.
  2. On a lightly floured surface, roll out puff pastry into a 12-inch circle.
  3. Transfer pastry to a parchment-lined baking sheet.
  4. In a bowl, combine bell peppers, onion, garlic, olive oil, oregano, thyme, basil, salt, and pepper. Mix until vegetables are evenly coated.
  5. Spread vegetables evenly over pastry, leaving a 1-inch border.
  6. Sprinkle Parmesan cheese over vegetables.
  7. Fold up edges of pastry to enclose filling.
  8. Bake for 40-45 minutes, or until pastry is golden brown.
  9. Let cool for 10 minutes before serving.
