Ingredients

  • 1/2 lb penne pasta
  • 3 cups mixed greens
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup diced red bell pepper
  • 1/2 cup diced cucumber
  • 1/2 cup crumbled feta cheese
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  1. Cook the penne pasta according to package directions. Drain and set aside.
  2. In a large bowl, combine the cooked pasta, mixed greens, tomatoes, red onion, red bell pepper, cucumber, feta cheese, and olives.
  3. In a small bowl, whisk together the olive oil, red wine vinegar, mustard, honey, salt, and pepper.
  4. Pour the dressing over the pasta salad and mix until everything is well combined.
