Heat the olive oil in a large pot over medium heat. Add the beef, pork, chicken, and chorizo and cook until the meats are browned, about 8 minutes.
Add the onion, garlic, bell peppers, tomato paste, cumin, oregano, smoked paprika, cayenne pepper, and salt and stir to combine. Cook until the vegetables are softened, about 5 minutes.
Add the beef stock and bring to a boil. Reduce the heat to low and simmer, covered, for 30 minutes.
Add the potatoes, carrots, and plantains and simmer, covered, until the vegetables are tender, about 20 minutes.
Serve hot with rice or warm corn tortillas.
