Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon ground turmeric
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground ginger
- 1/4 teaspoon ground coriander
- 1/4 teaspoon freshly ground black pepper
- 4 cups vegetable broth
- 1 head of broccoli, chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon red pepper flakes (optional)
Directions
- Set the Instant Pot to the sauté setting. Add the olive oil and onion and cook until the onion is softened, about 5 minutes.
- Add the garlic, turmeric, cumin, ginger, coriander, and black pepper and cook for 1 minute, stirring constantly.
- Add the vegetable broth, broccoli, salt, and red pepper flakes (if using) and stir to combine.
- Secure the lid and set the Instant Pot to manual high pressure for 5 minutes.
- When the timer is done, allow the pressure to release naturally for 10 minutes, then quick release the remaining pressure.
- Remove the lid and use an immersion blender to blend the soup until smooth. Alternatively, you can transfer the soup to a blender and blend until smooth.
- Taste and adjust seasonings if needed. Serve warm.
