Pastel de Choclo is a traditional Chilean dish that consists of a savory beef filling topped with a creamy corn mixture, baked to perfection. This hearty casserole is perfect for family gatherings or cozy dinners at home.
Ingredients
- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 1/2 cup raisins
- 1/2 cup black olives
- 4 hard-boiled eggs, sliced
- 6 large ears of corn, kernels removed
- 1/4 cup milk
- 2 tbsp butter
- 1/2 cup grated parmesan cheese
Directions
- In a large skillet, cook the ground beef, onion, and garlic over medium heat until the beef is browned. Season with cumin, paprika, salt, and pepper.
- Stir in the raisins and olives, and cook for another 5 minutes. Remove from heat and set aside.
- In a blender, puree half of the corn kernels with the milk until smooth. Pour into a bowl and mix in the remaining corn kernels.
- In a separate saucepan, melt the butter and stir in the corn mixture. Cook over low heat until thickened, then remove from heat.
- Preheat the oven to 350°F (175°C).
- In a baking dish, layer the beef mixture, sliced eggs, and corn mixture. Sprinkle with grated parmesan cheese on top.
- Bake in the preheated oven for 30-40 minutes, until the top is golden brown and bubbly.
