Ingredients

  • 3 medium-sized tomatoes, chopped
  • 2 medium-sized onions, finely chopped
  • 2 green chilies, slit
  • 1 teaspoon ginger-garlic paste
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chili powder
  • 1/2 teaspoon cumin powder
  • 1/2 teaspoon coriander powder
  • Salt to taste
  • 2 tablespoons oil
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • A few fresh curry leaves
  • Fresh cilantro, for garnishing

Directions

  1. Heat oil in a pan or kadai over medium heat.
  2. Add mustard seeds and cumin seeds. Let them splutter.
  3. Add curry leaves and sauté for a few seconds.
  4. Add finely chopped onions and sauté until they turn golden brown.
  5. Add ginger-garlic paste and sauté for a minute.
  6. Add turmeric powder, red chili powder, cumin powder, coriander powder, and salt. Mix well.
  7. Add chopped tomatoes and slit green chilies. Mix well.
  8. Cover and cook for 8-10 minutes or until the tomatoes are soft and mushy.
  9. Remove the lid and cook for another 2-3 minutes to thicken the gravy.
  10. Garnish with fresh cilantro and serve hot with rice, roti, or naan.
