Ingredients

  • 2.5 pounds ripe tomatoes
  • 1 large onion
  • 4 cloves of garlic
  • 1/4 cup olive oil
  • 1/4 cup balsamic vinegar

  • 4 cups vegetable broth
  • 1 teaspoon sugar
  • Salt and black pepper to taste
  • 1/2 cup heavy cream (optional)

Directions

  1. Preheat the oven to 400°F (200°C).
  2. Cut the tomatoes into quarters and place them on a baking sheet lined with parchment paper.
  3. Peel and chop the onion into wedges. Add them to the baking sheet with the tomatoes.
