Ingredients
- 1 pound lean ground beef
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 4 medium potatoes, peeled and sliced
- 4 carrots, peeled and sliced
- 1 can (10.75 ounces) condensed tomato soup
- 1 cup beef broth
- 1 teaspoon Worcestershire sauce
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
Directions
- Preheat your oven to 375°F (190°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
- Add the onion, green bell pepper, and garlic to the skillet. Cook until the vegetables are softened.
- Layer half of the sliced potatoes in the bottom of a greased casserole dish. Top with half of the ground beef mixture.
- Layer half of the sliced carrots on top of the ground beef, followed by the remaining ground beef mixture.
- Place the rest of the sliced potatoes on top of the ground beef, and then layer the remaining carrots on top.
- In a medium bowl, combine the condensed tomato soup, beef broth, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix well.
- Pour the soup mixture over the casserole, making sure to evenly distribute it.
- Cover the casserole dish with foil and bake for 40 minutes.
- Remove the foil and sprinkle the shredded cheddar cheese evenly over the top of the casserole.
- Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
