Shipwreck Dinner is a comforting and flavorful casserole that combines ground beef, potatoes, vegetables, and tomato soup. Ingredients

  • 1 pound lean ground beef
  • 1 onion, diced
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 4 medium potatoes, peeled and sliced
  • 4 carrots, peeled and sliced
  • 1 can (10.75 ounces) condensed tomato soup
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheddar cheese

Directions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.
  3. Add the onion, green bell pepper, and garlic to the skillet. Cook until the vegetables are softened.
  4. Layer half of the sliced potatoes in the bottom of a greased casserole dish. Top with half of the ground beef mixture.
  5. Layer half of the sliced carrots on top of the ground beef, followed by the remaining ground beef mixture.
  6. Place the rest of the sliced potatoes on top of the ground beef, and then layer the remaining carrots on top.
  7. In a medium bowl, combine the condensed tomato soup, beef broth, Worcestershire sauce, Italian seasoning, salt, and black pepper. Mix well.
  8. Pour the soup mixture over the casserole, making sure to evenly distribute it.
  9. Cover the casserole dish with foil and bake for 40 minutes.
  10. Remove the foil and sprinkle the shredded cheddar cheese evenly over the top of the casserole.
  11. Bake for an additional 10 minutes, or until the cheese is melted and bubbly.
  12. Remove from the oven and let it cool for a few minutes before serving.
