Ingredients

  • 4 lamb shanks
  • 2 tbsp olive oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 cup red wine
  • 2 cups beef broth
  • 1 butternut squash, peeled and cubed
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs for garnish

Directions

  1. Preheat the oven to 350°F.
  2. Season the lamb shanks with salt and pepper.
  3. In a large Dutch oven, heat the olive oil over medium-high heat.
  4. Brown the lamb shanks on all sides, then remove from the pot and set aside.
