Ingredients

  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 (14.5 ounce) can diced tomatoes
  • 2 (15 ounce) cans chickpeas, drained and rinsed
  • 1 (14.5 ounce) can vegetable broth
  • 1/2 cup chopped fresh parsley

Directions

  1. Heat the olive oil in a large pot over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
  2. Stir in the cumin, coriander, paprika, turmeric, cinnamon, black pepper, and red pepper flakes. Cook for 1 minute.
  3. Add the tomatoes, chickpeas, vegetable broth, and parsley. Bring to a boil, reduce heat to low, and simmer for 30 minutes.
  4. Serve with warm pita bread. Enjoy!
