Ingredients

  • 1 pound elbow macaroni
  • 3 tablespoons butter
  • 3 tablespoons all-purpose flour
  • 2 cups milk
  • 2 cups shredded cheddar cheese
  • 1/2 cup grated parmesan cheese
  • 2 cups cooked, shredded chicken
  • 1/2 cup buffalo sauce
  • Salt and pepper to taste
  • Optional: Chopped parsley for garnish

Directions

  1. Preheat the oven to 350 degrees F.
  2. Cook the macaroni according to the package directions. Drain and set aside.
  3. Melt the butter in a medium saucepan over medium heat. Add the flour and whisk for 1 minute.
  4. Gradually whisk in the milk and cook until the sauce is thick and creamy, about 5 minutes.
  5. Stir in the cheddar cheese and parmesan cheese until melted.
  6. Add the cooked macaroni and shredded chicken and stir until combined.
  7. Stir in the buffalo sauce and season with salt and pepper.
  8. Transfer the mac and cheese to a 9x13 inch baking dish and bake for 25 minutes, until golden brown.
  9. Garnish with parsley, if desired, and serve.
