Meatless Black Bean Burgers

Ingredients

  • 1 can (15 ounces) black beans, rinsed and drained
  • 1/2 cup onion, chopped
  • 1/2 cup bread crumbs
  • 1 egg
  • 1 tablespoon chili powder
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 cup olive oil

Directions

  1. In a medium bowl, mash the black beans with a fork or potato masher until they are broken down and slightly mushy.
  2. Add the onion, bread crumbs, egg, chili powder, garlic powder, salt and pepper and mix everything together with a spoon.
  3. Form the mixture into four equally sized patties.
  4. Heat the olive oil in a large skillet over medium-high heat.
  5. Add the patties to the skillet and cook for 3-4 minutes on each side, until golden brown.
  6. Serve on buns with your favorite toppings.
