Ingredients

  • 3-4 Roma tomatoes, diced
  • 1-2 cloves of garlic, minced
  • 2 tablespoons fresh basil, chopped
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste
  • 1 French baguette, sliced
  • 1/4 cup grated Parmesan cheese (optional)

Directions

  1. Preheat the oven to 375 degrees F.
  2. In a medium bowl, combine the diced tomatoes, garlic, basil, parsley, olive oil, and balsamic vinegar. Season with salt and pepper to taste.
  3. Place the baguette slices on a baking sheet and top with the tomato mixture. Sprinkle the Parmesan cheese (if using) on top.
  4. Bake in the preheated oven for 10-15 minutes, or until the bread is lightly toasted and the cheese is melted and bubbly.
  5. Serve warm.
