Ingredients
- 4 cups of cubed, seedless watermelon
- 1/4 cup of freshly squeezed lime juice
- 2 tablespoons of freshly chopped mint
- 2 tablespoons of freshly chopped basil
- 2 tablespoons of honey
- 2 tablespoons of olive oil
- Salt and pepper to taste
Directions
- In a blender or food processor, combine the watermelon, lime juice, mint, basil, honey, and olive oil and blend until smooth.
- Add salt and pepper to taste.
- Pour the soup into a large bowl and chill in the refrigerator for at least 30 minutes before serving.
