Ingredients

  • 4 cups of cubed, seedless watermelon
  • 1/4 cup of freshly squeezed lime juice
  • 2 tablespoons of freshly chopped mint
  • 2 tablespoons of freshly chopped basil
  • 2 tablespoons of honey
  • 2 tablespoons of olive oil
  • Salt and pepper to taste

Directions

  1. In a blender or food processor, combine the watermelon, lime juice, mint, basil, honey, and olive oil and blend until smooth.
  2. Add salt and pepper to taste.
  3. Pour the soup into a large bowl and chill in the refrigerator for at least 30 minutes before serving.
