Ingredients

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 large onion, diced
  • 2 bunches collard greens, washed and chopped
  • 1 cup vegetable broth
  • 1 teaspoon oregano
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper
  • Hot sauce, to taste

Directions

  1. Heat the olive oil in a large skillet over medium-high heat.
  2. Add the garlic and onion and sauté for 2 minutes, stirring frequently.
  3. Add the collard greens and sauté for 3 minutes, stirring frequently.
  4. Add the vegetable broth, oregano, smoked paprika, salt, pepper, and cayenne pepper. Stir to combine.
  5. Reduce the heat to low and cover the skillet. Simmer the collard greens for 10 minutes, stirring occasionally.
  6. Remove the skillet from the heat and season with hot sauce to taste. Serve warm.
