Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup butter, softened
  • 1/2 cup creamy peanut butter
  • 1 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup mashed ripe bananas (2-3 bananas)

Directions

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, beat together butter, peanut butter, and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Add the dry ingredients to the wet ingredients and mix until just combined. Fold in the mashed bananas.
  5. Pour batter into prepared pan and bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean. Allow to cool before serving.
