Ingredients

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ¼ cup butter, melted
  • 2 eggs, beaten
  • ¾ cup sugar
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon zest
  • ¼ cup lemon juice
  • ¼ teaspoon salt
  • Confectioners’ sugar, for dusting

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch baking pan.
  2. In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Press into the prepared baking pan.
  3. In another bowl, mix together the eggs, sugar, flour, lemon zest, lemon juice, and salt. Pour over the crust.
  4. Bake in the preheated oven for 25 minutes, or until the top is golden brown.
  5. Let cool, and then dust with confectioners’ sugar.
