Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 pound ground turkey
  • 1 cup cooked white rice
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1/2 cup frozen corn
  • 1/2 cup diced onion
  • 1 teaspoon minced garlic
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/2 cup shredded cheddar cheese

Directions

  1. Preheat oven to 350°F.
  2. In a large skillet over medium-high heat, cook ground turkey until browned.
  3. Add rice, tomatoes, corn, onion, garlic, oregano, basil, paprika, and black pepper. Cook and stir until vegetables are softened, about 5 minutes.
  4. In a 9×13-inch baking dish, place bell pepper halves. Fill each with the turkey and vegetable mixture. Sprinkle with cheese.
  5. Bake in preheated oven for 25 minutes, or until peppers are tender.
