Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, softened
  • 3/4 cup sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2 cups strawberries, diced
  • 1/2 cup sliced almonds
  • 1/2 cup confectioners' sugar

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Grease a 9-inch springform pan.
  2. In a medium bowl, whisk together flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
  4. Gradually beat in flour mixture. Spread evenly into the prepared pan.
  5. Bake for 25 to 30 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then remove to cool completely.
  6. In a medium bowl, combine the diced strawberries, almonds, and confectioners' sugar. Spread evenly over the cooled cake.
  7. Chill for at least half an hour before serving.
