Ingredients

  • 1 lb. boneless skinless chicken breasts
  • 1/4 cup olive oil
  • 2 teaspoons shawarma spice blend (see below)
  • 1 head romaine lettuce, chopped
  • 2 cups cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh lemon juice
  • Salt and pepper to taste

Directions

  1. In a small bowl, mix together the shawarma spice blend (see below).
  2. Rub the chicken breasts with the spice blend, olive oil, and a pinch of salt and pepper.
  3. In a large skillet over medium-high heat, cook the chicken breasts for 6-8 minutes per side, or until cooked through.
  4. Remove the chicken from the skillet and let cool for 5 minutes before slicing into strips.
  5. In a large bowl, combine the lettuce, tomatoes, red onion, feta cheese, parsley, and mint.
  6. Add the sliced chicken and the lemon juice, and toss to combine.
  7. Season with salt and pepper to taste.
  8. Serve immediately.
