Ingredients

  • 2 tablespoons olive oil
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced celery
  • 2 cloves garlic, minced
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon kosher salt
  • 3 tablespoons tomato paste
  • 1/2 pound okra, sliced
  • 1 pound cooked and peeled shrimp
  • 1/2 pound cooked and shredded crab meat
  • 1 tablespoon chopped fresh parsley

Directions

  1. Set your Instant Pot to the sauté setting. Add the olive oil, onion, bell pepper, and celery. Sauté for 4-5 minutes, until the vegetables are beginning to soften.
  2. Add the garlic and flour and cook for 1 minute, stirring constantly.
  3. Add the chicken broth, thyme, smoked paprika, cayenne pepper, black pepper, and salt. Stir to combine.
  4. Add the tomato paste and stir to combine. Place the lid on the Instant Pot and set the valve to sealing.
  5. Cook on high pressure for 10 minutes. Quick release the pressure. Open the lid and stir in the okra, shrimp, and crab. Place the lid back on and set the valve to sealing.
  6. Cook on high pressure for 2 minutes. Quick release the pressure. Stir in the parsley and serve.
