Ingredients

  • 1/2 pound penne pasta
  • 1 ripe avocado, pitted and peeled
  • 1/2 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 2 cloves garlic, minced
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper, to taste
  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water until al dente.
  2. Meanwhile, in a food processor, combine the avocado, olive oil, lemon juice, garlic, salt, and pepper and blend until smooth and creamy.
  3. Drain the cooked pasta and return it to the pot.
  4. Pour the avocado sauce over the cooked pasta and toss to coat.
  5. Add the Parmesan cheese and parsley and toss to combine.
  6. Serve the pasta hot or cold, garnished with additional Parmesan cheese and parsley, if desired.
