Ingredients

  • 1 pound fresh green beans, trimmed and cut into 1-inch pieces
  • 2 tablespoons extra-virgin olive oil
  • 3 cloves garlic, minced
  • 3 anchovy fillets, minced
  • Salt and freshly ground black pepper, to taste

Directions

  1. Bring a large pot of salted water to a boil over high heat.
  2. Add the green beans and cook until tender, about 5 minutes.
  3. Drain the green beans and set aside.
  4. In a large skillet, heat the olive oil over medium heat.
  5. Add the garlic and anchovies and cook, stirring frequently, until the anchovies have broken down and the garlic is fragrant, about 2 minutes.
  6. Add the cooked green beans to the skillet and toss to combine.
  7. Season with salt and pepper, to taste.
  8. Serve immediately.
