Ingredients

  • 1 pound boneless, skinless chicken breasts, cut into strips
  • 1 red bell pepper, seeded and sliced
  • 1 green bell pepper, seeded and sliced
  • 1 onion, sliced
  • 4 ounces bacon, cooked and chopped
  • 1 tablespoon olive oil
  • 1 teaspoon garlic salt
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon freshly ground black pepper
  • 8 flour tortillas
  • Optional toppings: shredded cheese, sour cream, salsa, guacamole

Directions

  1. Heat the olive oil in a large skillet over medium-high heat. Add the chicken strips and cook for 4-5 minutes, stirring occasionally, until the chicken is cooked through.
  2. Add the bell peppers, onion, bacon, garlic salt, cumin, chili powder, and black pepper. Cook for an additional 5 minutes, stirring occasionally, until the vegetables are tender.
  3. Warm the tortillas in the microwave or in a dry skillet over medium heat.
  4. Divide the chicken and vegetable mixture among the tortillas. Add any desired toppings and serve immediately.
