Ingredients

  • 1/2 cup butter
  • 1/2 cup packed brown sugar
  • 3 ripe bananas, sliced
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground ginger
  • 1/4 cup dark rum
  • 1/2 cup heavy cream
  • 2 (8 ounce) packages cream cheese, softened
  • 1/2 cup white sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 (9 inch) graham cracker crust

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
  2. In a medium saucepan, melt butter over medium heat. Stir in brown sugar, and cook until bubbly. Add banana slices, and cook until soft. Stir in cinnamon, nutmeg, cloves, and ginger. Pour in rum and cream, and cook until thickened, about 5 minutes.
  3. In a large bowl, beat cream cheese and sugar until smooth. Beat in eggs one at a time, then stir in vanilla. Pour over graham cracker crust.
  4. Pour banana sauce over cream cheese layer. Bake in preheated oven for 35 minutes, or until cheesecake is set.
  5. Allow to cool for 30 minutes, then chill in refrigerator for at least 1 hour before serving.
