Ingredients

  • 1/2 cup red lentils
  • 1/2 cup bulgur
  • 4 cups vegetable broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper
  • Salt and pepper to taste
  • 1/4 cup fresh parsley, chopped

Directions

  1. In a large pot, heat the olive oil over medium-high heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the cumin, paprika, cayenne pepper, salt, and pepper, and stir to combine. Cook for 1 minute.
  3. Add the lentils and bulgur, and stir to combine. Cook for 1 minute.
  4. Add the vegetable broth and bring to a boil. Reduce heat to low and simmer until the lentils and bulgur are tender, about 20 minutes.
  5. Stir in the parsley and adjust seasonings to taste. Serve hot.
