Ingredients
2 delicata squash
2 tablespoons olive oil
Salt and pepper to taste
1/2 cup grated Parmesan cheese
1/4 cup chopped fresh parsley
Directions
Preheat the oven to 400°F.
Cut the squash in half lengthwise, scoop out the seeds, and then cut into 1/2-inch thick slices.
Place the squash slices on a baking sheet lined with parchment paper.
Drizzle the squash with the olive oil and season with salt and pepper.
Bake for 25 minutes, or until the squash is tender.
Remove from the oven and top with the Parmesan cheese and parsley.
Return to the oven and bake for an additional 10 minutes, or until the cheese is golden and bubbly.
Serve warm.
