Ingredients

  • 2 cups brussels sprouts, chopped
  • 1/4 cup sliced almonds
  • 1/4 cup dried cranberries
  • 1/4 cup feta cheese crumbles
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

Directions

  1. In a large bowl, combine the chopped brussels sprouts, almonds, cranberries and feta cheese.
  2. In a separate bowl, whisk together the olive oil, balsamic vinegar and honey to make the dressing.
  3. Pour the dressing over the salad and toss to combine.
  4. Season with salt and pepper, to taste.
  5. Serve immediately.
