Chef John's Spaghetti with Red Clam Sauce

Ingredients

  • 1/2 pound spaghetti
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1/2 teaspoon crushed red pepper flakes
  • 1/4 cup white wine
  • 2 (6.5 ounce) cans chopped clams, drained
  • 1/4 cup minced fresh parsley
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. Bring a large pot of lightly salted water to a boil. Add spaghetti and cook for 8 to 10 minutes or until al dente; drain.
  2. Heat the olive oil in a skillet over medium heat. Stir in garlic, and red pepper flakes, and cook for 1 minute. Pour in white wine, and cook until reduced by half, about 3 minutes.
  3. Stir in the clams, and cook for 3 minutes. Mix in parsley and oregano, and season to taste with salt and pepper. Reduce heat to low, and simmer for 5 minutes.
  4. Toss the cooked spaghetti with the sauce to serve.
