Ingredients
- 1 cup cooked lentils
- 1 cup cooked quinoa
- 1/2 cup cooked brown rice
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
- 1/2 cup diced mushrooms
- 1/2 cup grated carrots
- 2 cloves garlic, minced
- 1/2 cup breadcrumbs
- 1/4 cup chopped fresh parsley
- 1 egg, beaten
- 1/4 cup ketchup
- Salt and pepper to taste
- 1/4 cup shredded cheese (optional)
Directions
- Preheat oven to 350°F.
- In a large bowl, mix together all the ingredients except for the cheese.
- Form the mixture into a loaf shape and place it in a greased baking dish.
- Top with the cheese, if desired.
- Bake for 30-35 minutes, or until the top is golden brown and the internal temperature is 165°F.
- Let cool for 10 minutes before slicing and serving.
