Ingredients

  • 1 cup cooked lentils
  • 1 cup cooked quinoa
  • 1/2 cup cooked brown rice
  • 1/2 cup diced onion
  • 1/2 cup diced bell pepper
  • 1/2 cup diced mushrooms
  • 1/2 cup grated carrots
  • 2 cloves garlic, minced
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped fresh parsley
  • 1 egg, beaten
  • 1/4 cup ketchup
  • Salt and pepper to taste
  • 1/4 cup shredded cheese (optional)

Directions

  1. Preheat oven to 350°F.
  2. In a large bowl, mix together all the ingredients except for the cheese.
  3. Form the mixture into a loaf shape and place it in a greased baking dish.
  4. Top with the cheese, if desired.
  5. Bake for 30-35 minutes, or until the top is golden brown and the internal temperature is 165°F.
  6. Let cool for 10 minutes before slicing and serving.
