Ingredients
1 cup cooked lentils
1 cup cooked quinoa
1/2 cup cooked brown rice
1/2 cup diced onion
1/2 cup diced bell pepper
1/2 cup diced mushrooms
1/2 cup grated carrots
2 cloves garlic, minced
1/2 cup breadcrumbs
1/4 cup chopped fresh parsley
1 egg, beaten
1/4 cup ketchup
Salt and pepper to taste
1/4 cup shredded cheese (optional)
Directions
Preheat oven to 350°F.
In a large bowl, mix together all the ingredients except for the cheese.
Form the mixture into a loaf shape and place it in a greased baking dish.
Top with the cheese, if desired.
Bake for 30-35 minutes, or until the top is golden brown and the internal temperature is 165°F.
Let cool for 10 minutes before slicing and serving.
