Ingredients

  • 2 tablespoons olive oil
  • 1 pork cutlet, thinly sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 teaspoon sugar
  • 4 cups chicken or vegetable broth
  • 2 tablespoons miso paste
  • 2 packages ramen noodles
  • 4 eggs
  • 2 green onions, thinly sliced
  • 1 sheet nori, cut into small strips
  • Sesame seeds, for garnish

Directions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the pork cutlet and cook for 2-3 minutes per side until golden and cooked through.
  3. Remove the pork cutlet from the pot and set aside.
  4. Add the onion and garlic to the pot and cook for 3-4 minutes until softened.
  5. Add the soy sauce, mirin, and sugar to the pot and cook for 2 minutes.
  6. Add the chicken broth and miso paste to the pot and stir to combine.
  7. Add the ramen noodles and cook for 5 minutes until tender.
  8. Add the eggs to the pot and cook for 3 minutes until cooked through.
  9. Divide the ramen among four bowls and top each with the pork cutlet, green onions, nori, and sesame seeds.
  10. Serve immediately.
