Ingredients

  • 1 pound dry spinach fettuccini
  • 2 cups fresh broccoli florets
  • 1 cup diced ham
  • 1/2 cup butter
  • 3 cloves garlic, minced
  • 1/2 cup all-purpose flour
  • 3 cups milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 1/4 cup grated Parmesan cheese

Directions

  1. Bring a large pot of salted water to a boil. Add the spinach fettuccini and cook for 8 minutes, or until al dente. Drain and set aside.
  2. In a large skillet, melt the butter. Add the garlic and cook for 1 minute, stirring constantly. Add the flour and whisk until smooth. Cook for 1 minute, stirring constantly.
  3. Slowly add the milk, whisking continuously. Cook until thickened, about 4 minutes. Add the salt, pepper, and nutmeg. Stir in the Parmesan cheese.
  4. Add the cooked fettuccini, broccoli, and ham. Cook for 2 minutes, stirring occasionally.
  5. Serve hot.
