Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
In a medium bowl, combine butter, walnuts, pecans, 1/2 cup sugar, cinnamon, nutmeg, and cloves. Mix until blended.
Lay one sheet of phyllo dough in the bottom of the prepared pan, and brush lightly with butter. Top with another sheet of phyllo, and brush lightly with butter. Repeat with remaining sheets of phyllo dough, buttering each layer.
Spread walnut mixture over the phyllo in the pan.
In a large bowl, beat cream cheese, 1/2 cup sugar, and vanilla until light and fluffy. Beat in eggs, one at a time. Pour over walnut mixture in the pan.
Bake for 30 minutes, or until golden brown and set. Remove from oven and let cool.
In a small saucepan, heat honey over medium heat until it begins to bubble. Drizzle over cooled cheesecake.
