Ingredients
2 medium yellow squash
1/2 cup all-purpose flour
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon paprika
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 cup vegetable oil
Directions
Slice the yellow squash into 1/4 inch thick slices.
In a shallow bowl, mix together the flour, garlic powder, onion powder, paprika, salt, and pepper.
Dip each slice of squash into the flour mixture and coat evenly.
Heat the oil in a large skillet over medium-high heat.
Add the coated squash slices to the hot oil and fry for 2-3 minutes per side, or until golden brown and crispy.
Remove from the skillet and drain on paper towels.
Serve hot with your favorite dipping sauce.
Interesting Facts
Yellow squash is a great source of Vitamin C, A and B6.
It is also low in calories and high in dietary fiber.
