Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/4 teaspoon ground cardamom
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground pepper
  • 3/4 cup Israeli couscous
  • 1 1/2 cups vegetable broth
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh parsley

Directions

  1. Heat olive oil in a medium saucepan over medium heat.
  2. Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
  3. Add the cumin, coriander, turmeric, cardamom, cinnamon, nutmeg, and pepper and cook for 1 minute.
  4. Add the couscous and stir to coat with the spices.
  5. Stir in the broth and bring to a boil.
  6. Reduce heat to low and simmer, covered, for 10 minutes.
  7. Remove from the heat and stir in the cheese and parsley.
  8. Serve warm.
