Ingredients
1 tablespoon olive oil
1/2 cup onion, chopped
2 cloves garlic, minced
1/2 teaspoon ground cumin

Directions
Heat olive oil in a medium saucepan over medium heat.
Add the onion and garlic and sauté until the onion is softened, about 5 minutes.
Add the cumin, coriander, turmeric, cardamom, cinnamon, nutmeg, and pepper and cook for 1 minute.
Add the couscous and stir to coat with the spices.
Stir in the broth and bring to a boil.
Reduce heat to low and simmer, covered, for 10 minutes.
Remove from the heat and stir in the cheese and parsley.
Serve warm.
