Ingredients

  • 1 ½ cups graham cracker crumbs
  • 3 tablespoons sugar
  • 6 tablespoons butter, melted
  • 2 (8-ounce) packages cream cheese, softened
  • ½ cup sugar
  • 2 tablespoons all-purpose flour
  • ½ teaspoon vanilla extract
  • 2 eggs
  • 2 cups fresh blueberries
  • ½ cup sugar
  • 1 teaspoon grated lemon rind
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons cornstarch

Directions

  1. Preheat oven to 325°F. In a medium bowl, combine graham cracker crumbs, 3 tablespoons sugar, and melted butter. Press mixture onto bottom and sides of 9-inch springform pan. Bake 10 minutes; cool.
  2. In a large bowl, beat cream cheese, ½ cup sugar, flour, and vanilla extract until smooth. Add eggs; beat just until blended. Pour into cooled crust. Bake 40 minutes or until center is almost set.
  3. Meanwhile, in a medium saucepan, combine blueberries, ½ cup sugar, lemon rind, lemon juice, and cornstarch. Cook over medium heat, stirring constantly, until thickened. Pour over cheesecake. Bake 15 minutes. Cool on wire rack.
  4. Cover and chill 8 hours. Garnish with fresh blueberries, if desired. Enjoy!
