In a small bowl, mix together the bourbon, honey, melted butter, cinnamon, nutmeg, ginger, vanilla, salt, and pepper.
Brush the cut sides of the peaches with the bourbon mixture.
Heat a grill over medium-high heat and place the peaches cut-side down on the grill. Grill for 4-5 minutes, or until the peaches have nice grill marks and are tender.
Remove the grilled peaches from the grill and let cool slightly.
To serve, place 2 peach halves on each plate. Top each peach half with 1 ounce of burrata cheese and 1 piece of prosciutto.
