Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup coconut sugar
  • 1/4 cup vegan butter, melted
  • 1/4 cup unsweetened applesauce
  • 1 teaspoon vanilla extract
  • 1/2 cup mashed ripe banana (about 1 large banana)
  • 1 cup grated zucchini, packed (about 1 small zucchini)

Directions

  1. Preheat oven to 350°F (177°C) and lightly grease a 12-count muffin tin.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. In a separate bowl, whisk together the coconut sugar, melted vegan butter, applesauce, and vanilla extract.
  4. Add the mashed banana and grated zucchini to the wet ingredients and stir until combined.
  5. Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  6. Divide the batter evenly among the 12 muffin cups. Bake for 25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  7. Allow muffins to cool in the pan for 5 minutes before transferring to a cooling rack.
