Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup vegetable oil
  • 1/4 cup orange juice
  • 1/4 cup apricot jam
  • 1/4 cup finely chopped walnuts
  • 1 egg white, beaten

Directions

  1. Preheat oven to 350F (175C).
  2. In a large bowl, mix together the flour, sugar, baking powder, and salt. Add the oil and orange juice and mix until a dough forms.
  3. On a lightly floured surface, roll out the dough to 1/4-inch (6mm) thickness. Cut out circles with a 2-inch (5cm) cookie cutter.
  4. Place the circles on a greased baking sheet. Spread a teaspoon of apricot jam on each circle and sprinkle with chopped walnuts.
  5. Brush the circles with the beaten egg white and bake for 15-20 minutes, until golden-brown. Let cool before serving.
