Ingredients
2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup vegetable oil
1/4 cup orange juice
1/4 cup apricot jam
1/4 cup finely chopped walnuts
1 egg white, beaten
Directions
Preheat oven to 350F (175C).
In a large bowl, mix together the flour, sugar, baking powder, and salt. Add the oil and orange juice and mix until a dough forms.
On a lightly floured surface, roll out the dough to 1/4-inch (6mm) thickness. Cut out circles with a 2-inch (5cm) cookie cutter.
Place the circles on a greased baking sheet. Spread a teaspoon of apricot jam on each circle and sprinkle with chopped walnuts.
Brush the circles with the beaten egg white and bake for 15-20 minutes, until golden-brown. Let cool before serving.

Rugalech is a traditional Jewish cookie that is often served at holidays such as Rosh Hashanah and Hanukkah.
Rugalech are also sometimes filled with chocolate or other sweet fillings.
The name "rugalech" comes from the Yiddish word for "round."
