Ingredients

  • 1 cup wild rice
  • 1 cup micro chicken
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, diced
  • 1 cup mushrooms, diced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Directions

  1. In a medium saucepan, bring 2 cups of water to a boil. Add the wild rice and reduce the heat to low. Simmer for 20-25 minutes, or until the rice is cooked through.
  2. Meanwhile, in a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, carrot, and mushrooms. Cook for 5-7 minutes, stirring occasionally, until the vegetables are softened.
  3. Add the micro chicken to the skillet and cook for an additional 3-4 minutes, stirring occasionally.
  4. Add the cooked wild rice, paprika, oregano, salt, and pepper to the skillet and stir to combine. Cook for 5-7 minutes, stirring occasionally, until the mixture is heated through.
  5. Serve warm.
