Ingredients

  • 2 lbs. red potatoes, diced
  • 2 lbs. blue potatoes, diced
  • 2 lbs. green potatoes, diced
  • 1/2 cup mayonnaise
  • 1/4 cup white vinegar
  • 1/3 cup Dijon mustard
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/4 cup chopped fresh herbs (parsley, chives, thyme, etc.)

Directions

  1. In a large bowl, combine the diced potatoes.
  2. In a separate bowl, whisk together the mayonnaise, vinegar, mustard, olive oil, salt, and pepper.
  3. Pour the dressing over the potatoes and toss to coat.
  4. Add the fresh herbs and stir to combine.
  5. Cover the bowl and refrigerate for at least 30 minutes before serving.
