Gorgonzola-Stuffed Chicken Breasts Wrapped in Bacon

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup Gorgonzola cheese, crumbled
  • 1/4 cup freshly chopped parsley
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 8 slices bacon

Directions

  1. Preheat oven to 350 degrees F.
  2. In a small bowl, combine Gorgonzola cheese, parsley, olive oil, smoked paprika, garlic powder, onion powder, and black pepper. Mix until ingredients are combined.
  3. Place chicken breasts on a cutting board. Cut a pocket in each chicken breast, making sure not to cut through the other side. Stuff each pocket with the Gorgonzola cheese mixture.
  4. Wrap each chicken breast with two slices of bacon.
  5. Place chicken breasts on a baking sheet lined with parchment paper. Bake for 30 minutes, or until bacon is crisp and chicken is cooked through.
  6. Serve and enjoy!
