In a small bowl, combine Gorgonzola cheese, parsley, olive oil, smoked paprika, garlic powder, onion powder, and black pepper. Mix until ingredients are combined.
Place chicken breasts on a cutting board. Cut a pocket in each chicken breast, making sure not to cut through the other side. Stuff each pocket with the Gorgonzola cheese mixture.
