Ingredients
1 lb chicken gizzards
1 onion, chopped
2 cloves garlic, minced
1/2 teaspoon thyme
1/2 teaspoon cayenne pepper
1 teaspoon paprika
1 can (14.5 oz) diced tomatoes
1/2 teaspoon salt
1/4 teaspoon black pepper
2 cups long grain white rice
3 cups water
Directions
In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the gizzards and cook until lightly browned, about 5 minutes.
Add the onion, garlic, thyme, cayenne pepper, and paprika. Cook, stirring, for 1 minute.
Add the diced tomatoes and season with salt and black pepper. Bring to a simmer and cook for 10 minutes.
Meanwhile, in a medium saucepan, bring the water to a boil. Add the rice and stir. Reduce heat to low, cover, and cook for 15 minutes.
Serve the gizzard mixture over the cooked rice.
