Ingredients

  • 1 lb chicken gizzards
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon thyme
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 can (14.5 oz) diced tomatoes
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups long grain white rice
  • 3 cups water

Directions

  1. In a large skillet, heat 2 tablespoons of oil over medium-high heat. Add the gizzards and cook until lightly browned, about 5 minutes.
  2. Add the onion, garlic, thyme, cayenne pepper, and paprika. Cook, stirring, for 1 minute.
  3. Add the diced tomatoes and season with salt and black pepper. Bring to a simmer and cook for 10 minutes.
  4. Meanwhile, in a medium saucepan, bring the water to a boil. Add the rice and stir. Reduce heat to low, cover, and cook for 15 minutes.
  5. Serve the gizzard mixture over the cooked rice.
